Portobello Hello

My very good friend showed me this amazing salad recipe aaaages ago, and it’s defo one of my favourites.

I’m a meat lover. (I’m sure you think ‘That’s what she said…” but I purely mean in a gastronomic sort of way). However, portobello mushrooms are so delish I’m willing to give up meat for a meal.

Also, it’s a perfect pre-payday dinner because you hardly need anything – and you can chuck anything you like into it.

What you’ll need (for 2 servings):

  • 4 portobello mushrooms
  • 1 bag of rocket
  • 1 clove of garlic
  • 2 red peppers
  • Olive oil
  • Smoked paprika
  • Truffle oil
  • Salt and pepper

Get a pan as hot as possible. In the meantime chop up the peppers into 4-4 pieces, and quickly fry them with olive oil. One it’s done scoop them onto a plate and put them aside.

In the same, very very hot pan fry the mushrooms – also chopped up into bigger pieces. Make sure not to overcrowd your pan. When they started to get a golden brown color turn, and this point add the chopped garlic. Cook them together for 1-2 minutes and be very careful not to burn them.

When they’re done put them on top of the washed rocket, add the peppers, sprinkle over a good amount of salt, pepper and smoked paprika. And as a finishing touch bath the whole plate in a few drops of delicious truffle oil.
